The twin travel dicta of Bharat Darshan and Atithi Devo Bhavah, are known to the world through the medium of the Incredible India campaign. Contributing around 240 billion dollars to the GDP of the country and employing over 43 million people, the tourism industry is at its peak. India qualifies with flying colours in people’s bucket list owing to its rich heritage and cultural diversity.

Sula Vineyards in the Monsoon
Sula Vineyards in the Monsoon

But today, this delicate biodiversity balance has been eroded by global shifts in population, urbanization and earth’s depleting finite resources; the seed of what we now know as Sustainable Tourism.

Sula Vineyards, India’s largest and most awarded wine brand needs no introduction. With over 2 decades of leading all things wine, the country’s leading winemaker has proudly put the legacy and heritage of Indian wines on a global platform. Be it wines, hospitality or even the music festival; Sula Vineyards endeavours to keep evolving when it comes to the art of Indian wine making.

The proud curators of wine tourism in the country since 2005; The Tasting Rooms at Sula in Nashik are the place on earth where most people have tried wine for the first time. It also opened India’s first heritage winery resort The Source at Sula in 2017 in the city.

Now, Sula Vineyards is pioneering Sustainable Tourism in Asia. The brand, over the years, has just not pleased the palate but also the planet. Sula Vineyards has evolved from being just a winery to being one of the most sustainable wineries in the world.

More than 75% of our power comes from solar

The most abundant natural resource and not owned by anyone; the sun’s rays are put to good use by the brand. Almost all the rooftops are covered with solar panels in the vineyards in Nashik; hard to miss them while taking a leisurely stroll!

Every drop counts!

We recycle almost 40 million litres of water a year, which is enough to fill the iconic Gangapur Lake!

To make this possible, we’ve made changes in every aspect of how our resorts operate. Water-efficient bathroom fittings have been installed, housekeeping keep our hotels spotless with recycled water and guests are encouraged to take small actions to help us too, like turning off running water when they don’t need it.

We also use drip irrigation in our vineyards which cuts water consumption by almost half as compared to traditional flood irrigation methods.

No plastic in sight

We love the sound of glass clinks! Even if it’s not wine! Guests are often startled by the absence of plastic mineral water bottles in our resorts. These are replaced by reusable glass bottles with mineral water. Dedicated efforts are undertaken to eradicate plastic from all food and beverage offerings including cutlery and packaging.

Almost no waste to landfills!

Sula has also recently started generating its own biogas, fuelled by food waste generated by the restaurants. We are so proud that all these measures mean almost no waste generated from wineries is being sent to landfills.

Supporting the local community

The hospitality operations of Sula that employees over 160 people believes in supporting the local community through its CSR efforts as well as employing people from surrounding villages. Where people once struggled with the basics of life, Sula has created a positive impact on the lives of many. Happy faces do not shy away from showing off basic luxuries like clean drinking water, a refrigerator or even colour pencils for children!

We recognise a clear commitment to sustainability, demonstrated through good practice and policy to make a positive contribution to reducing impact on the environment. We are all aware of the importance of tackling climate change. Sula harnesses a deep commitment to being sustainable and implementing green policies, while maintaining excellent guest experience. We aim to be one of the most environmentally friendly hotels in the country,” says Monit Dhavale, Senior Vice President of Hospitality Operations at Sula Vineyards.

Sula has not only set the bar in India’s wine market but has also empowered hundreds of people by generating employment and improving the lives of people living in communities that are based in the areas we operate. With growing business comes serious responsibilities towards the environment and community as well. Sustainability is etched deep in our values and is just not a fad for us. We truly believe in making wine keeping the future in mind. We’ve come a long way yet there’s so much more to do! But like they one sip at a time,” says Rajeev Samant, CEO, Sula Vineyards.

Besides red and whites, Sula Vineyard’s has a keen inclination towards all things green. The brand’s existence in the industry is a true symbol of its potential and vision. Its wholesome holistic wine experience marks Indian wines on the global grape map!

What we eat often affects our mind and soul, food as we all know shapes our state of mind and well being. While we indulge in festivities this season, we must keep our diet which purifies, detox our body and soul. According to Ayurveda, eating a sattvic diet helps you keep, sattva—a clear headspace of truth, contentment, and a balanced mind. Satvik thali presented by Taj Nashik does exactly the same.

Inspired by temple food and Introduced specially for the occasion of Navratri, a festival which largely associated with eating clean and satvik food, food which is cooked without onion, garlic and anything that increases tamas in your body. Navratri is celebrated almost all across the country with local rituals and traditions and this diversification brings a plate full of delicacies across all parts of the country, Satvik thali served by Taj Nashik is an amalgamation of all these diverse cuisines.

The thali is divided into three parts appetizers which are served before thali, main course & desserts served in a thali and the meal ends with the piping hot Kulhad Masala Chai.

Satvik Thali The Taj Nashik
Satvik Thali The Taj Nashik

The first appetizer is Dhuaa Chass, a buttermilk drink with chopped chilies & coriander and a twist of live smoke to give a charcoal flavor. Followed by Samosa chat – a peas,potato-filled pastry with toppings of tamarind and mint chutney. Mutter Tikki is a cutlet made with mashed peas. All the appetizers had a tangy and peppery and they do increase your appetite.

Satvik Thali The Taj Gateway Hotel Nashik

Thali is quite a heavy affair with around 6-7 vegetable preparations, breads and rice with accompaniment of matka dahi. All the vegetables were cooked obviously without using garlic and onions. However, it’s hardly possible to find out the difference between the same, Spices used in the preparation were authentic and moderate. The whole thali had a very subtle aroma and flavors across the country like Banaras Kadhi Pakoda, Aloo Choka, Nimona, Bengan Kalonji and Makai Palak. All the dishes go very well with either fulka and puri both provided in the thali.

You can devour into Kesariya Rasmalai and Doodhi kheer once you are done with the meal, and conclude your meal with piping hot Kulhad Masala Chai.

The Thali is served at “Pancharatna”, Taj Nashik’s own north Indian & Maharashtrian restaurant. Thali will be served during the entire Navratri, timings are  Sunday to Monday for dinner and Friday Saturday and Sunday for lunch with a price point of Rs. 999/- inclusive of all taxes. Also, Pancharatna serves a la carte cuisine menu, Gujarati and Maharashtrian thalis and north India main course.

Sula Vineyards was the proud recipient of 13 awards at the recently held Indian Wine Awards, 2019. Sula Vineyards’ wins included 6 Silver and 4 Gold medals. The Sula Riesling 2019 won the ‘Best Pairing with Chicken Kung Pao’ award while The Source Grenache Rose 2019 India won the ‘Best in Show’ along with the Trapiche Oak Cask Malbec 2018, Argentina. The winners can clearly be identified with a striking sticker on each bottle that makes it stand out from the rest.

The 3rd edition of the Indian Wine Awards recognised 116 winning wines being crowned from a total of 376 wine nominations and 17 restaurants for their wine programs. The India Wine Awards led by the most qualified and foremost wine professionals in India and abroad, is an initiative powered by Sonal Holland MW, India’s first Master of Wine, Founder- Director of SoHo Wine Club and her namesake Academy. Wines entered in the competition were judged over two days, in September this year, by a panel chaired by Sonal Holland MW, comprising 17 distinguished wine professionals, hospitality leaders and tastemakers. As always, the tastings were done blind, without any knowledge of producer, region or quality level.

Over the past two decades, Sula Vineyards has continually established itself as a leader in the Indian wine industry, with milestones across its winemaking, tourism and business ventures. Since the sale of its first bottle of wine in 1999, the brand has made a mark in the Indian wine industry by capturing over 60% of the wine market and establishing itself as a pioneer and innovator par excellence. It is also one of the most sustainable wineries in the world.

Applauding the India Wine Awards initiative and the wins, Rajeev Samant, Founder & CEO, Sula Vineyards said, “The India Wine Awards is such an important initiative for our wine industry in India. We need a credible awarding body that recognizes noteworthy wines being produced in India as well as imported wines that are coming into the country; something that a consumer can refer to when selecting their wines. India Wine awards, as the country’s apex and most premium awards is a necessary step towards recognising wines that are worth drinking.”

Speaking on the occasion, Sonal Holland MW said, “We feel proud that in three years, since our launch in 2017, we have established India Wine Awards as the biggest and the most authoritative wine competition in the country that holds authenticity, credibility, relevance and integrity as its 4 cornerstones. It is equally exciting that the India Wine Awards which recognizes, rewards and celebrates the best of wines and wine programs in the country, continues to get bigger, bolder and broader in its vision, with education, empowerment and experiences at the heart of its creative intent.”

The Indian Wine Awards reiterate the fine winemaking skills and choicest selection of grapes that has been the brand’s forte and establishes Sula as a forerunner even today.

For all Nashikites wondering if SulaFest will be held in Nashik in 2020 or is it shifting to Sula Vineyards’ premise in Bangalore, here is some good news… The Gourmet World Music Festival’s 13th Edition will be held in their very own city – Nashik. In fact, this time around the festival will be bigger and going by Sula’s core value it will also be More Sustainable.

Apparently, a lot of rumours were doing rounds in Nashik that SulaFest, which is a hallmark festival of Nashik city that attracts thousands of tourists every year to this wine town, might not be held here now. Crushing all these rumours, the Sula Vineyards team has announced that the grand music festival will be held in its incepting town Nashik itself. They also said that the festival this time targets to be eco-friendlier and will also provide more support to local businesses and NGOs that are willing to participate.

“A lot of energy-consuming activities and less eco-friendly practices are going to be reduced like less printing, more utilisation of solar power that Sula itself generates as well as use of more natural materials in creating the fest ground. Meanwhile, we want to keep this festival in Nashik as much as the authorities co-operate and at the same time support local vendors,” informs Senior Vice-President, Hospitality Operations, Sula Vineyards Monit Dhavale. Dhavale has also been at the helm of the two-day extravaganza which is being held in Nashik to celebrate the harvest season since 2007.

In a bid to provide the guests with a larger than life experience every year, SulaFest not only brings in the best talent from around the world but also creates unique experiences to give the festgoers a weekend to remember. This time, the festival will witness India’s first Wine Experience Zone which will expose festgoers with a plethora of activities surrounding wine. The area will bring an added attraction to SulaFest which is India’s first food and wine festival and was started keeping wine awareness and education in mind.

The festival which always gets bigger and better every year will take on a more grandiose approach in 2020 with a great artist line-up that will be announced soon. Get ready to witness a fun-filled fest offering a mega mix of great music, wine, drinks, food, fashion, and shopping in the vineyards’ beautiful open-air amphitheatre.

Exploring the new menu at Sula Vineyard’s Tasting Room

We have always been a fan of the spectacular view from Sula’s tasting room, seating amidst the lush green vineyards and sipping wine with the sunset is a perfect afternoon escape from the city chaos. This is a perfect excuse for a leisurely evening every Nashikkar is looking for. So we heard that Sula has revamped the food at the tasting room we couldn’t resist exploring the new menu.

The newly revamped menu has something for everyone. From dabeli and kanda bhajiyas for a local flavor to thin-crust pizzas, salads, Mediterranean quick bites and Asian small plates, Tasting Room’s new food menu have a delicious selection of popular dishes from around the world. You won’t want to leave without a dessert (paired beautifully with Sula’s Late Harvest or Sparkling Shiraz). We especially recommend the Nutella crêpes with whipped cream and cookie dough apple pie with ice cream.

We had a selection of dishes including falafel, Onion-garlic-green chilly pizza, cheesy garlic bread, dabeli, fish finger, prawns koliwada,  chicken satay, salt & pepper prawns, overloaded nachos. If you are amateur at food and wine pairing please take the help of staff to order you a perfect meal, We opted for Sula’s Late Harvest or Sparkling Shiraz and Chardonnay and Rasa. A basic rule of food pairing is sipping your wine while chewing your food to get the flavors, unlike other spirits where you eat the food after gulping down the drink.

We especially loved the fish fingers and tarter sauce, BBQ onion pizzas with Sparkling Shiraz, the bubbly texture of sparkling wine really complements the fried food and hence when you are in confusion always opt-out for the sparkling wine. We also love the Rasa with cheesy garlic bread, it was perhaps the best garlic bread we have had in town so far.

Post this humongous meal we dug into some Nutella crepes and apple pie, and believe us there was no better ending than sipping Sula’s late harvest with the thin and sugar-coated Nutella crepes, apple pie also lived up to the expectations and hints of the cinnamon and vanilla chocolate with the late harvest match made in the heaven.

This spectacular meal was indeed an experience, and we are eagerly waiting for our next visit really soon.

Amateur Wine Pairing Guide

Sparkling wine goes best especially with fried food, the bubbles Apparently clean the oil from your tongue and release the flavors.  although when in doubt always go for sparkling wine.

Red wine goes well with carbs infused food like red meat, bread, pizzas, and fats.

White wine goes well with cheese, white meat (less spicy)

Nashik: Sula Vineyards, India’s largest and most awarded wine brand brings Kādu – India’s first wildlife wine to Maharashtra. Kādu, (pronounced Kaa-du) is India’s first wine for a cause, is dedicated to supporting tiger conservation in the country. As one of the most sustainable wineries in the world; the brand brings this ‘cause worthy’ wine to Maharashtra.

Kadu Range
Kadu Range

Senior Vice President & Chief Winemaker, Sula Vineyards Karan Vasani has crafted Kādu from the choicest premium wine grapes to produce beautiful easy drinking varietals. Offered in 3 roaring options – the Kādu Chenin Blanc has notes classifying as slightly sweet, floral and fruity, while those preferring lush, medium bodied and peppery notes with subtle oak can opt for the Kādu Cabernet Shiraz. Kādu Shiraz Rosé, an absolute favourite, is light, fruity and full of luscious berry flavours.

India is home to these glorious beasts through its many reserves. Over the years, decreasing habitat and increase in poaching etc. has brought the numbers of India’s national animal to the verge of extinction. Working towards protecting tigers and encourage the cause of tiger conservation, Sula Vineyards has stirred up another change in the wine industry. With each bottle sold, Kādu will make a donation towards tiger conservation in the state.

To ensure the optimum end-use of the funds contributed, Sula Vineyards has collaborated with Sanctuary Nature Foundation designed to empower and support grassroots conservationists across India. The brand’s legacy in supporting such a noble cause reflects in the success of Mud on Boots, which supported tiger conservation in Karnataka.

Speaking on the launch, Rajeev Samant, Founder and CEO, Sula Vineyards, said, “It is imperative for businesses to realize their responsibility towards the environment. As the pioneers of Indian wine, we want to contribute to the great work being done to protect tigers, in the way that we know best – creating fine wines! Kādu is homage to our love for wildlife conservation! And after Karnataka, we aim to support this noble cause in Maharashtra”

Bittu Sahgal, Founder, Sanctuary Nature Foundation said, “Sula Vineyard’s commitment to donate a percentage of proceeds from the sale of Kādu to Sanctuary’s Mud on Boots Project has enabled incredible wildlife conservationists working on the ground in the Cauvery landscape of Karnataka. We now welcome its launch in Maharashtra, and look forward to impacting positive change at the grassroots level here too.”

Try out such cause worthy varietals at a store near you. All the three variants will be available in 2 different sizes priced at Rs. 625 (750ml) & 350 (375ml) respectively in Maharashtra.

The 13th edition of SulaFest marked the two-decade anniversary of Sula Vineyards epitomizing all things wine and more

Celebrities like Gabriella Demetriades, Diva Dhawan and more were spotted chilling at India’s biggest vineyard music festival

SulaFest 2020, the country’s most gorgeously-situated vineyard music festival, was a celebration beyond measure in its 13th edition this year. Marking the two-decade anniversary of Sula Vineyards, the two-day extravaganza saw thousands of people having a blast and making memories for a lifetime. With experiences thoughtfully crafted for one and all, the fest was a wholesome affair as a true ode to all things wine and more.

Making the anniversary extra special was the unveiling of India’s first wine in a can – Dia Wine Sparkler in an easy and convenient can format. Offered in both the red and white varietals, the visitors were thrilled to enjoy their favorite wine in a can!

In addition to the delicious wines from Sula, fest-goers also enjoyed a wide selection of spirits and cocktails from around the world, brought to India by Sula’s import arm Sula Selections. Brands like Beluga Noble Russian Vodka, The Botanist, Cointreau, Budweiser and Asahi made sure to set the spirits high!

Keeping the promise of bringing the best of world music world in the heart of the wine capital, second day of SulaFest 2020 saw the very popular Merchant brothers, Salim–Sulaiman, bringing in the Bollywood vibe with their record-breaking hits in the vineyards’ beautiful open-air amphitheatre with the weather doing the ambience absolute justice.

Bringing more melody to the music festival, this year’s heady line-up also included Voctronica – India’s first all-vocal ensemble and the popular Dutch-New Zealand trio, My Baby performing some of their best hypnotic dance mixes. Adding to the mix were The Local Train with a mash up of Hindi rock tracks as well as Germany based EDM kings Doctor Dru.

Sulafest 2020 offered a range of curated experiences at the Vinosphere, this editions’ new attraction. Master classes conducted by master winemakers’ ensured peeps raised their glasses in an informed way swirled with lots of fun of course! The Panzani live pasta carts were a big hit and everyone was seen indulging in scrumptious varieties of pasta. Paul & Mike with their gourmet chocolates and London Dairy with their exclusive Lite range (no added sugar and gluten free) clubbed with new flavours were all equipped to satiate everyone’s sweet cravings. The Living Foodz massive line art tunnel, neon and 360 degrees gif photo booths were some favourite Instagram-friendly spots.

Wine games, vino spa, foot massage with grape seed oil and vineyard tours kept the visitors busy on both the days. Needless to say, grape stomping was an important element at the fest that had the people queue up, after all jumping into a vat full of fresh grapes and stomping away with friends is super fun.

The fest also offered kite flying, board games and camping under the midnight stars, which was well received by many. Tarot card sessions had a big number of people excited to read their cards. Brands such as U.S Polo Association offered some great ‘responsible’ merchandise and fulfilled the retail therapy component of any successful fest.

The festival also saw participating from United Nations Children’s Emergency Fund (UNICEF), a United Nations agency responsible for providing humanitarian and developmental aid to children around the world.

Rajeev Samant, Founder & CEO, Sula Vineyards says, “I am thrilled with the incredible vibe! This edition has been truly remarkable in every aspect. A magnificent celebration for an iconic milestone for our 2 decade anniversary! Over 10,000 fest-goers had a weekend to remember, depicts why SulaFest is the country’s most awaited vineyard music festival.”

Food Review: Amritsari By Kalras

Punjabi food often gets lost amongst the restaurant-style pre-made gravy based dishes which are distance apart from the authenticity, like every other regional Indian cuisine it was hard to find authentic Punjabi dishes in Nashik. To counter this, an age-old family of hoteliers has come up with their new authentic Punjabi outlet “Amritsari By Kalras”

Amritsari has an outpost on college road to serve the delicacies from the land of saag, parathas, and lassi. Focused mainly on takeaways and online delivery they also have arrangements if you wish to dine in. Amritsari has a concise menu to focus only on the signature dishes from the region. The menu includes Chole, Rajma, Parathas, Kadhi, and quintessential Dal Makhni for a la carte menu and thali, meals, and combos, Although they only have vegetarian options.

Rabdi Lassi at Amritsari Nashik Rajma Chawal at Amritsari Nashik Rabdi Lassi at Amritsari Nashik Dal Makhni & Rajma Chawal at Amritsari Nashik

All the preparation can be paired either with rice, kulcha, and laccha paratha. But we would strongly recommend sticking with rice & kulcha, Kulcha might seem little buttery/oily and if you are not used to it, then inform them beforehand. We had chole, rajma, dal makhani and kadhi. Since we personally had very little exposure and palate to judge Punjabi food, one thing which we notice across all the dishes was the use of very basic spices and taste which relates to the home-cooked food.

Out of all the menu, Rajma was a personal favorite, it had the mild texture and moderate use of spices which went very well with bowl steaming rice. I personally would love to have a dollop of ghee instead of butter for my meal but you have to settle with butter instead at Amritsari. Chole at the other had more complex flavors and definitely less oil and zesty ness as compared to chole we are used to eating, the strong smell of spices really gets well complimented with a nice hot kulcha. Dal makhani had the perfect blend of butter, spices, and tomato although it resembled something we are used to eating in restaurant buffets and lacks the homely touch like the other dishes.

We conclude our meal with their Rabdi lassi, it was a mix of condensed milk, dry fruits and a dash of rose syrup. Quite refreshing the lassi was not as heavy as the name suggests. To summarize it, our experience was extremely fulfilling at Amrtisari, though there is a little scope of improvements, which we already conveyed to the team. You must give it a chance to explore the food they have to offer. Since there is small space to seat you can prefer getting it delivered.  The price range is around 150-250 Rs.

Sula Vineyards, India’s largest wine producer has just become the first national wine brand to be listed with TASMAC – The Tamil Nadu State Marketing Corporation, marking its much-awaited launch in the state. Raising a glass to the good news, the brand will now be available in wine shops across Tamil Nadu.

As a rule, all brands of alcohol need to be registered with TASMAC in order to be available at any wine shop in the state. Owned by the Government of Tamil Nadu, TASMAC has a monopoly over wholesale and retail vending of alcoholic beverages in the state of Tamil Nadu. It controls the Indian Made Foreign Liquor (IMFL) trade in the state and thus is an essential step towards Sula Vineyard’s future plans. As one of the top alcohol consuming states in the country, this step opens great avenues for the brand through TASMAC.

Mr. Rajeev Samant, Founder & CEO, Sula Vineyards shares, “ We are absolutely excited to be the first and only national wine brand to be associated with TASMAC and offer our wines in the state. As the most integral channel In Tamil Nadu for any alcohol brand, TASMAC will ensure that our wines are available to the entire state. It is a true accomplishment for the brand and I am glad to spread the Sula cheer to Tamil Nadu.”

With a legacy of producing India’s finest wines, Sula Vineyards is a brand that is synonymous with all things wine and more. Working towards the goal of offering their best to the state, Rajeev Samant and his team’s endless efforts have finally succeeded as Sula Vineyards becomes the first wine to be listed with TASMAC.

The premium and sparkling range will be offered for the first time through retail and is a big win for the brand who is a pioneer of the wine industry in the country and holds over 60% of the market share. Tamil Nadu holds a great potential and has a large number of wine enthusiasts who will now be able to enjoy the wines following ease of access.

MARDANI KHEL

Troop from Kolhapur

Originating from Maharashtra, Mardani Khel is a weapon-based martial art form. It owes its development to the geographic conditions of the state, i.e.hills, caves and valleys. This medieval form of combat emerged during the Maratha dynasty, and was also employed in wars during the religious persecution and conquest of indigenous Indians. Kolhapur used to be the centre of the Maratha kingdom, and the villages around it had talims (training centres) where skilled elders prepared youngsters for war. After the First War of Independence in 1857, the British banned the use of weapons used by Indians, with  talims subsequently forced to turn Mardani Khel into a folk game to ensure its survival. The use of weapons- swords, katyar (dagger), lathi kathi (bamboo sticks), veeta (darts), bhala (javelin), dand and patta (long-bladed swords) continued but the moves were made more stylised and less lethal.
